RESPECTFUL VITICULTURE
Our oenology is born from the conviction that only respectful and detailed viticulture allows us to obtain the fruit of the highest quality, a cornerstone in the quality and typicality of a great wine. In accordance with this principle, the winery has been meticulously built, based on a design that guarantees an optimal workflow, in order to operate by gravity throughout the entire process, from the reception of the grapes to the bottling.
We begin vinification with 10 kg vintage boxes and continue with strict grain-by-grain selection, using a double selection table. Fermentation is carried out in vats of small volume (15 and 30 hectoliters), to be able to vinify each plot independently. Most of the vats are made of oak, a factor that improves the structure of the wines and optimizes their integration with the wood. The wines are subsequently aged in fine-grain French oak barrels for a minimum period of fifteen months and bottled without fining or filtering, in order to preserve their organoleptic qualities as much as possible.
